Granola Part II

Norwex sells a biodegradable cutting board made out of rice husks (mind-blown) and Aldi sells organic goji berries, and in the Autumn I finally stop being so haphazard with what I feel myself and my family. I love this time of year and how it’s just easier to fall back into nourishing ways. Fall food is the best.Norwex_Cutting_BoardWhy is granola so dang expensive at the store? It’s so easy to make, and my 12 year old can easily take this on as a weekly chore. My kids love to customize with their own favorite add-ins. For years I have used this one as my go-to recipe, but later this week I will be joining several women from America and Canada for a 10 day real food, clean eating support group. We work hard to cut out all sugar, so this week I am modifying my recipe a little.

Granola Take 2

4 cups of oats ( I like old-fashioned better than quick. Gluten free if you need to do that.)

1 1/2 Cups of sliced raw almonds. (Sometimes I do 1 cup almonds and 1/2 cups pecans)

3 Tb ground flax seed

1/2 tsp. salt

1 Tb Cinnamon

1/4 Cup Honey

1/4 Cup Coconut Oil

1 tsp. Vanilla

1 1/2 cup of dried goji berries,dried cranberries or raisins.  These are my favorite brand because they are sweetened with organic apple juice.

Preheat the oven to 350 degrees. In a bowl, mix the oats, nuts, flax, salt and cinnamon. Mix, and then lay out the mixture on a 15 x10 inch baking pan. I LOVE my Pampered Chef Bar Stone for this. Toast in the oven for 10 minutes, stirring frequently.

Remove from oven and set aside.

In a saucepan, heat the coconut oil and the honey. Whisk in the vanilla. Stir the liquid mixture over the oats and finish mixing by hand.  Turn the heat on the over to 300 and put the granola back in the oven for 15-20 minutes, stirring every 10 minutes to prevent burning.

Transfer pan to a rack to cool completely. Stir in your dried fruit. Seal in an airtight container and see if you can make it last a week while it’s fresh, good luck, that NEVER happens at our house!

Optional…. sometimes the last 7-8 minutes of baking I sprinkle on unsweetened  coconut flakes. Yum.

  1. Hi Amanda, thus is very similar to the recipe I use, only no fruit. We usually opt for organic Strawberry jam with yougurt, but the fruit would nice for a dry snacking option. Question, where do you purchase the cranberries, I love them in my salads, also the flax seed? Happy cooking, Adele

    1. HI Adele! I get that brand at my Woodmans near me. I do not know if you have that store by you but I would assume Whole Foods would have a kind not over sugared as well. The ground flaxseed you can get at Costco or almost any grocery store with a good healthy food aisle!
